Ingredients
- 1 cup pumpkin seeds (raw, unsalted, or pepitas)
- 2 Tbsps lime juice (freshly squeezed)
- 1 tsp chili powder
- ¼ tsp garlic powder
- 1 pinch cayenne (optional)
- ¼ tsp salt (optional)
Directions
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Whisk lime juice, chili powder, garlic powder, and optional cayenne and salt together in a medium bowl.
- Toss the pumpkin seeds in the lime juice spice blend until they’re well coated.
- Spread the seeds out evenly onto the baking sheet.
- Bake for 12–15 minutes, stirring halfway through.
- Remove from the oven and let cool. They’ll get crispy as they cool.

Substitutions
Try the same lime chili blend with sunflower seeds.
If you’re a spice fan, use chipotle chili powder in place of the regular chili.
